Thanksgiving dinner is over, and you still have plenty of turkey and trimmings in your refrigerator. There’s more to make with your leftovers besides sandwiches.
This episode of “Tipline” gives you three delicious recipes for Thanksgiving leftovers that make good use of extra meat and side dishes.
Make turkey enchiladas with shredded turkey, or stuff leftover stuffing into mushrooms for a delicious side dish. And, use leftover cranberry sauce to fold into scones for breakfast. The detailed recipe for the scones is below.
These recipes are so tasty, you might pine for Thanksgiving leftovers more so than the actual holiday dinner.
2 cups all purpose flour
2 teaspoons baking powder
½ teaspoon kosher salt
5 tablespoons unsalted butter, cut in cubes
½ cup half-and-half
1/3 cup granulated sugar
1 large egg
½ cup cranberry sauce
1 teaspoon orange zest
1 teaspoon cinnamon
2 tablespoons turbinado sugar
Preheat the oven to 425°F. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. Add orange zest. Crumble the butter into the flour mixture using your hands. It should resemble a coarse meal.
In a small bowl, whisk the half-and-half, sugar and the egg. Pour the wet ingredients into the dry ingredients. Stir gently just to combine until a dough forms. Gently knead it a few times, don’t over work the dough. Add the cranberry sauce and swirl thru the dough. Turn dough onto a baking sheet lined with parchment. Pat it into a circle about 1-inch thick. Using a sharp knife cut into 8 wedges. Sprinkle with turbinado sugar. Bake for 10-15 minute or until golden. Transfer to a rack to cool slightly.
